3 cakes in one week!

Haven't really been making time for baking so really enjoyed this week. I make a raspberry cake, lemon drizzle traybake and chocolate brownies! Busy busy :)

Chocolate caramel crostata

Had a baby and stopped cooking.

I've just realised my last post was the week before my due date and I've been absent from my blog since then. My little one is now nearly eight months and over the last month I've started to get back into my cooking. 

The focus has changed from baking to cooking delicious meals for me and the hubby. Here is a selection from the last month ...

Pork medallions with ratatouille and baked sweet potato. 

Griddles steak with rocket and piquante pepper salsa. 

Moroccan lamb stuffed peppers 

Mixed bean and sweet potato bake

Fish gouging with pea puree

One pot paprika chicken 

Beef and sweet potato casserole 

Oaty apple breakfast muffins

Topping 

50g of butter, brown sugar, flour and oats mix with hands and set aside for later. 

Cake mix

Mix 250g of plain flour, 25g of oats, 175g of caster sugar zest of a lemon and 2 tbsp of baking powder. 

In a jug whisk 100ml of milk with two eggs. 

In a small saucepan melt 150g butter. 

Then alternate mixing butter and egg mixture into dry mix until all combined. 

Peel, core and chop one eating apple. 

Line tray with muffin cases and fill 2/3 with cake mix, top with a few apple pieces then dry crumble mix. 

Cook at 190 for 30 

Strawberry macarons. First ever attempt

These beautiful French delicacies have been something I've admired for years but never attempted until today. 

I found a recipe of the bbc food website and halved it just to try. Here are a few photos of the different stages. 

Ready to go in the oven for 12 mins... Let's see. 

Ok first batch was a disaster for two reasons. I halved recipe but didn't half egg whites. In addition I think the oven was too hot. Going to try again tomorrow.  

Apple streusel cake

A shallow cake made of a simple sponge topped with sliced apples and a dry streusel mix. 

Delicious served with whipped cream. 

Sunday chocolate cake

A delicious chocolate cake made for a couple of friends. Definitely cheered us all up.
