Oaty apple breakfast muffins

Topping 
50g of butter, brown sugar, flour and oats mix with hands and set aside for later. 

Cake mix
Mix 250g of plain flour, 25g of oats, 175g of caster sugar zest of a lemon and 2 tbsp of baking powder. 
In a jug whisk 100ml of milk with two eggs. 
In a small saucepan melt 150g butter. 
Then alternate mixing butter and egg mixture into dry mix until all combined. 
Peel, core and chop one eating apple. 
Line tray with muffin cases and fill 2/3 with cake mix, top with a few apple pieces then dry crumble mix. 

Cook at 190 for 30
